they only bolt on to the hub casting designed for bolt-on carriers ; standard A2 hubs have an inbuilt carrier that limits you to the 256mm front discs we have normally.

VRs / Polo GTI hubs have two threaded holes onto which the (different) carriers for calipers suitable for 288 or 312mm discs (and probably larger) will fit, opening up using the caliper from the VRs (288mm), or MkI Audi TT and various equivalent platform VW / Seat / Skoda models (312mm).

Ahhh so non trivial upgrade?

If your FSI lacks power, are you sure the engine is in good nick?
You had mentioned suspicions recently.
Running a poorly engine at high engine speeds and loads is unwise, doubly so for an FSI.

No it’s not lacking it actually runs v well indeed. Even the FSi is very poor in the HP stakes overall.

It's just nuts and bolts in real terms, but effectively you are assembling two new front strut assemblies as you need to remove the existing hub casting from the shock/spring and fit the new hub/ brake / caliper and a new disc. Maybe possible without needing spring compressors etc, but if you're looking at the Ring are springs / shocks / brake pipes (at least) not also on the menu? When my mechanic made up my existing big brake system I dropped off the pile of parts (top strut bearings, SP3248 springs, B6 shocks, Polo GTI hubs, 312mm carrier-calipers-pads, HEL braided brake pipes, Febi drop link / ARB bush kit, Blueprint (Febi) discs), the weekend before and he put them all together, then dropped the existing entire strut / caliper combo on either side and put the new ones in when he had a workshop space a few days later. As the replaced struts had been new but standard parts (B4 shocks, Monroe SP3248 springs, similar Febi Bilstein parts throughout a few months previously) they were swapped across onto my project car where the original brake calipers and drums had been sprayed in a 'sporty" colour at some point, but the discs, pads, shocks, springs, ARB/ and strut bearings were all needing to be replaced so a quick refresh.
