In theory, if you are not skimming head or block, your solution should be fine, but general info was said.

I'll see if I can measure the protrusion just to double check. If I had the head skimmed, I don’t intend to, the amount of skim would have to be added to the protrusion to get the new correct gasket thickness?

I wrote it wrong. When skimming head, you don't change combustion chamber volume. When you skim block you do and have to compensate with gasket.
